Tambi\u00e9n referirse a la suerte de poder asistir a ella. Todo sonar\u00eda grandilocuente y poco objetivo. Lo importante es grabar en la memoria, el paladar \u2014y, en realidad, en la vida\u2014 una cita que ya period especial a priori, por reunir al due\u00f1o del posicionado como <b>mejor restaurante del mundo en la \u00faltima edici\u00f3n de la lista \u2018The World\u2019s 50 Greatest Eating places\u2019 <\/b>con uno de los cooks que, en los \u00faltimos tiempos, ha multiplicado su visibilidad y <b>capacidad de influencia fruto del empe\u00f1o en su apuesta monogr\u00e1fica por la cocina del mar<\/b>. Que <b>Mauro Colagreco y \u00c1ngel Le\u00f3n decidan cocinar juntos<\/b> ya period una oportunidad \u00fanica. \u201cLlev\u00e1bamos a\u00f1os cruz\u00e1ndonos en muchos sitios, hasta que hace unos meses en Madrid nos encontramos y decidimos cerrar una fecha para cocinar juntos\u201d, cube <b>Colagreco<\/b>, chef argentino al frente de <b>Mirazur<\/b>, en la Costa Azul, y de otra quincena de restaurantes en diferentes puntos del globo. \u201cEra un honor pensar en recibir a Mauro en casa\u201d, a\u00f1ade <b>Le\u00f3n<\/b>, due\u00f1o de<b> Aponiente<\/b>, espacio triestrellado (como Mirazur) en <b>El Puerto de Santa Mar\u00eda<\/b>.<\/p>\n<p>El domingo 6 de junio a mediod\u00eda \u2014ya pleno verano gaditano\u2014, <b>Colagreco y Le\u00f3n compartieron la cocina del Molino de Mareas que es sede de Aponiente<\/b>. Podr\u00edan haber resuelto con un men\u00fa \u2018a 4 manos\u2019 autom\u00e1tico o casi facil\u00f3n, dada la envergadura de aunar dos cocinas muy definidas, una de ellas fuera de su casa, y de servir a <b>50 comensales<\/b> que tuvieron que reservar previamente v\u00eda la internet de Aponiente (un apunte: cuando se hizo p\u00fablica esta cita, se remit\u00eda a ese \u2018site\u2019 para la reserva, que en ese momento daba como \u00fanica opci\u00f3n apuntarse en su lista de espera, lo que si hac\u00eda un comensal interesado en asistir al privilegiado almuerzo, recib\u00eda a los 70 minutos aproximadamente e-mail y sms para confirmar reserva: \u201c<b>Gracias por emprender su traves\u00eda con nuestra tripulaci\u00f3n<\/b>. Su reserva ha sido confirmada\u201d. Podr\u00edan haber resuelto f\u00e1cil, pero <b>Colagreco y Le\u00f3n se complicaron mucho<\/b>, much\u00edsimo, para <b>bordar un maravilloso men\u00fa donde fueron combinando sus respectivos estilos y platos<\/b>, intercalando sus actuales propuestas, para dar como resultado <b>\u2018Mare Luna\u2019 o la suma de la cocina marina de Le\u00f3n<\/b> (ahora mismo, a un nivelazo incre\u00edble) y <b>la cocina lunar de Colagreco<\/b> (que, desde que reabri\u00f3 en junio de 2020 \u2014tras el primer confinamiento\u2014, apost\u00f3 por un calendario de reservas y men\u00fas cambiante en funci\u00f3n de las ciclos lunares).<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>El<b> men\u00fa \u2018Mare Luna\u2019<\/b> fue realmente <b>muy extenso<\/b> \u2014algo en realidad obligatorio si se juntan por un solo d\u00eda (un solo servicio) dos cooks de esta envergadura\u2014 y reflej\u00f3 el grand\u00edsimo momento de ambos cooks. <b>Si los estilos de Le\u00f3n y Colagreco no se parecen a priori, ese d\u00eda encajaron perfecto<\/b>.<\/p>\n<p>Y en eso tuvo que ver el <b>talento para ser capaces de \u2018complicarse la vida\u2019<\/b> y no recurrir a replicar o \u2018fabricar\u2019 sus platos m\u00e1s f\u00e1ciles, sino evitarlo y optar por aquellos que mejor pod\u00edan cuadrar en una <b>propuesta firmada a 4 manos<\/b>, para la que d\u00edas antes parte del <b>equipo de Mirazur <\/b>se traslad\u00f3 a El Puerto de Santa Mar\u00eda para trabajar conjuntamente con el<b> equipo de Aponiente <\/b>y dejar todo organizado y estructurado.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-large wp-image-58771\" src=\"https:\/\/www.gastroeconomy.com\/wp-content\/uploads\/2021\/06\/Gastroeconomy_MareLuna_MauroColagreco_AngelLeon_72-1024x996.jpg\" alt=\"\" width=\"1024\" height=\"996\" srcset=\"https:\/\/www.gastroeconomy.com\/wp-content\/uploads\/2021\/06\/Gastroeconomy_MareLuna_MauroColagreco_AngelLeon_72-1024x996.jpg 1024w, https:\/\/www.gastroeconomy.com\/wp-content\/uploads\/2021\/06\/Gastroeconomy_MareLuna_MauroColagreco_AngelLeon_72-300x292.jpg 300w, https:\/\/www.gastroeconomy.com\/wp-content\/uploads\/2021\/06\/Gastroeconomy_MareLuna_MauroColagreco_AngelLeon_72-768x747.jpg 768w, https:\/\/www.gastroeconomy.com\/wp-content\/uploads\/2021\/06\/Gastroeconomy_MareLuna_MauroColagreco_AngelLeon_72-700x681.jpg 700w, https:\/\/www.gastroeconomy.com\/wp-content\/uploads\/2021\/06\/Gastroeconomy_MareLuna_MauroColagreco_AngelLeon_72.jpg 1440w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"\/><\/p>\n<h3>Platos en una misma comida<\/h3>\n<p>En medio del men\u00fa, surgieron \u2018\u00faltimas noticias\u2019 como la<b> \u2018paletilla\u2019 (barriga) de at\u00fan de almadraba curado al aire, presentada por Le\u00f3n<\/b> unos d\u00edas antes en Madrid Fusi\u00f3n, donde <b>Colagreco expuso su propuesta lunar<\/b>, del que en \u2018Mare Luna\u2019 se conocieron creaciones correspondientes a diferentes fases lunares (que da lugar a los men\u00fas \u2018Ra\u00edces\u2019, \u2018Hojas\u2019, \u2018Flores\u2019 y \u2018Frutas\u2019), como las Curcubit\u00e1ceas, el Taco de reina (capuchina), la Papa al aire, las Alcachofas o la Marea Negra, platos de Colagreco.<\/p>\n<p>Para el recuerdo, queda la <b>oportunidad de disfrutar en una misma comida<\/b> un aut\u00e9ntico<b> \u2018hit\u2019 de Mirazur <\/b>como la<b> Remolacha con caviar<\/b> y la <b>evoluci\u00f3n<span class=\"Apple-converted-space\">\u00a0 <\/span>de emblemas de Aponiente<\/b> como <b>Jarrete<\/b> o la<b> Morena<\/b> \u2018trinchada\u2019 \u2014como su fuera un cochinillo\u2014 en sala. Desde Aponiente, tambi\u00e9n llegan a la mesa, adem\u00e1s de recetas como las<b> Ca\u00f1a\u00edllas calcinadas<\/b>, los <b>Muergos (navajas) a la bilba\u00edna<\/b>, demostraci\u00f3n del nivel al que se encuentra Le\u00f3n en un plato donde C\u00e1diz se cruza con Pa\u00eds Vasco Adem\u00e1s, surge un plato casi afrancesado de Le\u00f3n: la <b>\u2018Vichyssoise\u2019 de ostiones<\/b>. Y una maravilla t\u00e9cnica y est\u00e9tica de Colagreco: un maravilla de <strong>Alcachofas<\/strong><b> <\/b>colocadas hoja a hoja en una tarta de hojaldre de aut\u00e9ntica artesan\u00eda.<\/p>\n<p>Por otro lado, el arranque de \u2018Mare Luna\u2019 fueron varios <b>aperitivos de Aponiente<\/b> (servidos en sus \u2018cubos\u2019 acristalados situados en el acceso al restaurante), como las Puntillas al sol y la Caballa con adobo, antes de probar la <b>Paletilla de almadraba <\/b>nada m\u00e1s pasar al inside y probar un bocado gustoso y lujoso como el <b>Caviar con mayonesa<\/b>.<\/p>\n<p>En el comedor, la experiencia sigue en la mesa con la <b>Mantequilla de plancton<\/b> con la que Le\u00f3n acompa\u00f1a el primer <b>pan de varios elaborados en Aponiente<\/b> y que llegan en un carrito a la sala, acompa\u00f1ados de explicaciones sobre cada uno.<\/p>\n<p>Y, al ultimate, los <b>postres<\/b> son un colof\u00f3n tan brillante como el men\u00fa completo. Le\u00f3n es capaz de convertir con buen tino bocados de \u2018origen salado\u2019 en creaciones dulces, con el incre\u00edble <b>Calamar de potera<\/b> o las <b>Huevas de lisa <\/b>disfrazada de tocinillo de cielo. O, lo que es lo mismo, <b>unir lo mejor del talento de Mirazur y Aponiente<\/b> con la excusa de <b>aliar sus creaciones en un brillante men\u00fa degustaci\u00f3n<\/b> <b>v\u00eda el mar y la luna<\/b> (ejes de las propuestas respectivas de Le\u00f3n y Colagreco), lo que result\u00f3 un<b> aut\u00e9ntico acontecimiento gastron\u00f3mico<\/b>, una maravilla por la sucesi\u00f3n de platazos que se fueron entrelazando como si<b> dos estilos de cocina que no se parecen y son realmente muy particulares de repente encajaran perfecto<\/b>.<\/p>\n<p>M\u00e1s aun teniendo en cuenta la <b>crudeza del \u00faltimo a\u00f1o para la alta cocina por el Covid<\/b>, que azot\u00f3 a Aponiente y oblig\u00f3 a Colagreco a cerrar Mirazur en octubre, por lo que llevaba sin dar servicio desde entonces y volvi\u00f3 a hacerlo en Molino de Mareas, <b>solo 3 d\u00edas antes de reabrir su casa madre de Menton, en la Costa Azul<\/b> (a pocos metros de la frontera italiana) \u2014justo cuando Francia autoriz\u00f3 el servicio de la hosteler\u00eda en comedores anteriores\u2014.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>Como trasfondo, una lectura m\u00e1s: <b>con \u2018Mare Luna\u2019, Mauro Colagreco parece apoyar o promocionar a \u00c1ngel Le\u00f3n en su carrera internacional<\/b> y, en concreto, en <b>su posible escalada en la lista \u201850 Best\u2019<\/b>, donde la sede central del chef andaluz ya ocupa el<b> puesto 94 del Prime 100 mundial<\/b> (seg\u00fan la edici\u00f3n 2019, que es la \u00faltima publicada), a la espera del listado de 2021, que se publicar\u00e1 en octubre en Amberes y en el que es m\u00e1s que possible que Aponiente avance.<\/p>\n<p>Esta \u2018mini cr\u00f3nica\u2019, con las im\u00e1genes de los platos, es un <b>peque\u00f1\u00edsimo resumen de \u2018Mare Luna\u2019, el d\u00eda que \u00c1ngel Le\u00f3n y Mauro Colagreco cocinaron juntos en Aponiente<\/b>, firmando una aut\u00e9ntica \u2018barbaridad\u2019 de comida, por brillante y por nivelazo en cocina, sala (con alguna persona del equipo de Mirazur integrada con el del espacio gaditano) y complicidad para dar a luz un men\u00fa con sentido capaz de combinar platos de los dos cocineros.<\/p>\n<p>[Al final, este texto cay\u00f3 en la tentaci\u00f3n de la po\u00e9tica y casi la grandilocuencia. Era inevitable].<\/p>\n<p><b>Plato a plato, as\u00ed fue el men\u00fa \u2018Mare Luna\u2019 firmado por \u00c1ngel Le\u00f3n y Mauro Colagreco el 6 de junio de 2021. <\/b>O esto es lo que ocurre cuando se unen por un d\u00eda <b>dos triestrellados tan carism\u00e1ticos <\/b>(se\u00a0indica el restaurante al que corresponde cada plato).<\/p>\n<p style=\"text-align: center;\"><b>MEN\u00da \u2018MARE LUNA\u2019 <\/b><\/p>\n<p style=\"text-align: center;\"><b>Erizo, miel de mar (Aponiente)<img decoding=\"async\" class=\"alignnone size-large wp-image-58710\"
